Ingredients

  • 1 box Vanilla cake mix plus the ingredients needed which can be found on the back of the box. Yes, you can totally cheat here. 
  • 1 box instant vanilla pudding mix just the dry mix is needed.
  • 1 Tbsp ground cinnamon.

 

  • FOR FROSTING:
  • 3/4 cup butter softened
  • 1 Tbsp vanilla essence
  • 1-2 tsp ground cinnamon
  • 2-3 Tbsp milk
  • About 3 cups icing sugar
  • Baked churros chopped into small pieces.
  • Cinnamon sugar

Instructions for Curro Cupcakes

  1. Preheat oven to 180 degrees Celcius. Line two muffin tins with   paper cupcake holders.

 

  1. In a large bowl, prepare the cake mix according to package directions. Stir the pudding mix and cinnamon into the batter to combine. Portion the batter evenly among the muffin tins, filling about 3/4″ of the way full. Bake for approx. 15-18 minutes or until a toothpick inserted near the centre comes out clean or with moist crumbs. Allow to cool completely.

 

  1. In the bowl of your mixer, cream together the butter, vanilla and cinnamon until creamy. Slowly add in the icing sugar in – about one cup at a time until thick and fluffy. Use the milk to thin out the frosting if desired.

 

  1. Pipe frosting high onto cooled cupcakes and garnish with a freshly baked churro piece and a dusting of cinnamon sugar. Voila! You’re done and you have an amazing treat to share with someone.

6 tbsp. butter

2 tbsp. granulated sugar

1 tsp. pure vanilla extract

1 cup all-purpose flour

1 tsp. salt

2 large eggs

Vegetable oil for frying

  1. In a large saucepan over medium heat, add water, butter, and sugar. Bring to a boil, then add vanilla. Turn off heat and add flour and salt. Stir with a wooden spoon until thickened, for about 30 seconds. Let mixture cool for 10 minutes. 

 

  1. To the cooled mixture, using a hand mixer, beat in eggs one at a time until combined — transfer mixture to a piping bag fitted with a large open star tip. important is the star nozzle so you get the right shape for your Churro

 

  1. In a large pot over medium heat, add enough oil to come halfway up the sides and heat to 180°C. Holding the piping bag around 7cm or a few inches above the oil, carefully pipe churros into around 15cm long ropes. Use kitchen scissors to cut off dough from the piping bag. 
  2. Fry until golden, 4 to 5 minutes, turning as necessary. Fry 3 to 4 churros at a time and let the oil come back to 180°C before each batch. Remove churros with a slotted spoon or tongs, immediately roll churros in cinnamon sugar, and then place on a cooling rack.
